Whether you’re on a diet, need a quick bite to eat on your lunch break or simply just wanting to eat a little cleaner, I suggest you try out my grilled chicken strawberry salad. Yes, yes I know strawberries sound a little strange mixed in with a salad, but trust me on this! It’s delicious. A while back I used to work retail and I would always go to our Deli to see what I could find for lunch. I wanted something that would fulfill my hunger, but also something that wouldn’t be too heavy on my stomach since I’m in the middle of a work shift and this salad hit the spot every time. Strawberries are great to eat because they protect your heart and lower your blood pressure. They are packed with vitamins, fiber and have high levels of antioxidants. Just eating a cup of day benefits the whole body and we all know that lettuce are good for us. In my grilled chicken strawberry salad I also added fresh blueberries and pecans with a poppyseed dressing to top it off.

Slices of Grilled Chicken Breast served on a fresh bed of mixed greens, topped with strawberries, blueberries and pecans.
8 oz Spring mix or 1 bag
1-2 Chicken Breast
1 cup Blueberries
Poppyseed Dressing or your favorite dressing/vinaigrette
Tbsp Olive Oil
- In skillet, add olive oil, your preferred seasonings and grill chicken breast until well done. Slice chicken breast. Set aside.
- In serving bowl with spring mix, lay chicken breast on top. Spread sliced strawberries and blueberries around chicken breast.
- Add pecans and preferred dressing.
